Hispanic Heritage Month runs from September 15 to October 15. This month-long event celebrates the enduring contributions, rich heritage, and vibrant cultures of Hispanic and Latino-Americans, whose ancestry can be traced to Mexico, Central America, the Caribbean, Spain, and South America.
From a chef’s perspective, the diverse culinary heritage of Latino cuisine is incredibly exciting. Latino cuisine offers a world of diverse culinary experiences ranging from the complex chili-based moles of mountainous Oaxaca to Guatemalan chicken braised in coconut milk and Peruvian ceviche marinated in citrus and aji chile pepper,
I’ve included two recipes made with the traditional Latino flavors of Rumba Meats: grilled skirt steak with a traditional Argentinian chimichurri sauce, and meaty Rioja red wine-braised Spanish oxtail stew. Plus, a Cuban recipe for guava pastelitos made with puff pastry, cream cheese and guava paste. ¡Buen Provecho!
