The University of Notre Dame wanted to improve the appeal of its on-campus restaurant, Legends of Notre Dame, across its broad audience of students, faculty, alumni, and a global fan following. PACO stepped in to improve the restaurant’s menu and provide culinary and operational training support for the staff.

Challenge

Increase sales of the free-standing Legends bar and pub restaurant with a more relevant and updated menu.

Through market research and gap analysis, we uncovered an opportunity to add foods that were more on-trend to the menu and redesign the menu in a way that added to the appetite appeal.
